Sun-Dried Tomato Pesto

Pesto is one of the easiest sauces to make and one of my favorites because it's so delicious and fresh! I've switched it up today from your traditional basil pesto and whipped up this yummy sun-dried tomato pesto!

What you need:
- 7 oz jar of sun-dried tomatoes (mine were in EVOO)
- 1 cup fresh basil leaves
- 1/4 cup pine nuts
- 1/4 cup parmasean cheese
- 2 cloves garlic
- 1/4 cup olive oil (I did a mix of garlic olive oil and mushroom & sage olive oil)
- dash of salt
Add all of your ingredients to a food processor and blend until smooth! Add extra olive oil if it is too thick.

I sautéed some shrimp, asparagus, and mushrooms then tossed it with the pesto and put all of it on top of a bed of zucchini noodles! It was so delicious and full of fresh flavor!
